satay sushi burrito

this satay sushi burrito is packed with some of my favorite nutrient-dense ingredients, proving healthy food can still be fun & delicious.
anti-inflammatory golden turmeric rice, protein-packed ancestral beef sticks, omega-3-rich sacha inchi nuts, & a creamy peanut satay sauce all come together for one fresh, crunchy, satisfying meal.
high-protein, naturally gluten-free, & ready in about 10 minutes.
Ingredients
golden rice
- 7 oz7 oz7 oz Hearts of Palm Rice, 1 bag
- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Cilantro, finely chopped
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1-2 tsp1-2 tsp1-2 tsp Superfood Turmeric Golden Milk Powder - Further Food

- Salt and Pepper, to taste

- Nori Seaweed

- sautéed frozen vegetables (click for recipe), I used a stir-fry blend
- Grass-Fed Beef and Organ Meat Sticks - Lineage Provisions, or protein of choice

- Sacha Inchi Nuts - Imlak'esh Organics, or peanuts
creamy "satay" sauce
- 1/4 cup1/4 cup1/4 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Peanut Butter

- 2 Tbsp2 Tbsp2 Tbsp Red Curry Paste
- 1 Tbsp1 Tbsp1 Tbsp Barrel Aged Tamari Soy Sauce - Jozo, or coconut aminos

- 1 Tbsp1 Tbsp1 Tbsp Rice Wine Vinegar, or lime juice
- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Lemongrass

- 1/2 tsp1/2 tsp1/2 tsp Garlic Powder

- 1/2 tsp1/2 tsp1/2 tsp Onion Powder

- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first make rice, by adding a bag of palmini rice (or cauliflower rice) to a skillet & cook until all moisture has evaporated.
- add in remaining “golden rice” ingredients & cook an additional 1-2 minutes.
- remove rice from skillet & allow to completely cool.
- place rice in a cloth & squeeze out any extra moisture.
- lay out a sheet of nori, then layer on the following: golden rice mixture → veggies of choice → meat sticks (or protein of choice) → sacha inchi nuts or peanuts.
- very gently roll up nori, then slice in half.
- add all ingredients for creamy “satay” sauce to a bowl & mix well.
- serve your sushi burrito with your creamy “satay” sauce & enjoy!
