Balsamic Glazed Mini Turkey Loaves

Browning the onions before adding them to the mix just elevates the flavor and makes these mini loaves extra special! They are perfect for meal prepping with some mashed sweet potatoes and a veggie on the side for delicious lunches!
Ingredients
- 2 lb2 lb2 lb Ground Turkey
- 1 cup1 cup1 cup Onion, diced
- 1 Tbsp1 Tbsp1 Tbsp Ghee
- 2 whole2 whole2 whole Eggs
- 0.5 cup0.5 cup0.5 cup Almond Meal/Flour, or Italian Nut Crumbs
- 1 tsp1 tsp1 tsp Garlic Powder, omit if using Nut Crumbs
- 1 tsp1 tsp1 tsp Salt, omit if using Nut Crumbs
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper, omit if using Nut Crumbs
- 0.5 cup0.5 cup0.5 cup Ketchup, unsweetened
- 2 Tbsp2 Tbsp2 Tbsp Ketchup, unsweetened
- 2 Tbsp2 Tbsp2 Tbsp Balsamic Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar

- Preheat oven to 350
- Line a rimmed sheet pan with parchment paper
- Mix 2 tbsp ketchup plus 1 tbsp balsamic, set aside
- Melt ghee, add onions & cook till browning
- Combine remaining ingredients in a large bowl & mix well
- Shape into mini loaves & place on pan
- Spoon ketchup mixture over each loaf
- Bake 25-30 minutes
