one of my favorite parts of sunday mexican restaurant days with my family was always getting fried ice cream at the end of the meal. šŸ˜ŒšŸØāœØ so i turned that memory into bite-sized form with a few better-for-you upgrades… & no actual frying required!   these churro ā€œfriedā€ protein ice cream bites use a creamy cottage cheese + greek yogurt ice cream base with equip X masa chocolate churro flavored protein powder, then get rolled in a crunchy ā€œfriedā€ coating made with masa's beef tallow churro chips.   all the crispy fried ice cream vibes, nostalgic flavor, & irresistible goodness… just gluten-free, protein-packed, & way healthier than the OG.šŸ’„

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. follow my instructions for cottage cheese ice-cream, using the chocolate churro protein powder.
  2. pour into a small container & freeze.
  3. at about the 2-3 hour mark, scoop into balls, then store in the freezer overnight.
  4. to a food processor, add churro chips, monk fruit, cinnamon, & sea salt; blitz a few times into a crumble.
  5. transfer chip crumble to a bowl, then mix with melted coconut oil or butter.
  6. get your ice-cream balls out of the freezer, then roll-in the ā€œfriedā€ churro chips mixture & place on a sheet pan.
  7. option to drizzle with melted dark chocolate chips.
  8. freeze bites for at least 1 hour (keep stored in the freezer) & enjoy!
