churro āfriedā ice-cream bites
one of my favorite parts of sunday mexican restaurant days with my family was always getting fried ice cream at the end of the meal. ššØāØ so i turned that memory into bite-sized form with a few better-for-you upgrades⦠& no actual frying required!
these churro āfriedā protein ice cream bites use a creamy cottage cheese + greek yogurt ice cream base with equip X masa chocolate churro flavored protein powder, then get rolled in a crunchy āfriedā coating made with masa's beef tallow churro chips.

Ingredients
chocolate churro ice-cream
- cottage cheese ice-cream (click for recipe)
- 1/2 cup1/2 cup1/2 cup Prime Protein, Chocolate Churro - Equip Foods, use for protein powder in the ice-cream

"fried" churro chips
- 5 oz5 oz5 oz Traditional Tortilla Chips - Masa, use the churro flavor

- 1/4 cup1/4 cup1/4 cup Coconut Sugar with Monk Fruit - Lakanto, or monk fruit sweetener of choice in the ice-cream

- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground

- 1/4 tsp1/4 tsp1/4 tsp Sea Salt

- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- follow my instructions for cottage cheese ice-cream, using the chocolate churro protein powder.
- pour into a small container & freeze.
- at about the 2-3 hour mark, scoop into balls, then store in the freezer overnight.
- to a food processor, add churro chips, monk fruit, cinnamon, & sea salt; blitz a few times into a crumble.
- transfer chip crumble to a bowl, then mix with melted coconut oil or butter.
- get your ice-cream balls out of the freezer, then roll-in the āfriedā churro chips mixture & place on a sheet pan.
- option to drizzle with melted dark chocolate chips.
- freeze bites for at least 1 hour (keep stored in the freezer) & enjoy!
