Ingredients

- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted

- 1/2 cup1/2 cup1/2 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 cup1 cup1 cup Grain-Free Pretzel Twists, Sea Salt - Fit Joy

- 1/2 cup1/2 cup1/2 cup Pecans

- 1/4 cup1/4 cup1/4 cup Freeze-Dried Strawberries

- 1/4 cup1/4 cup1/4 cup Sugar-Free White Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
strawberry pretzel salad cookie
- preheat oven to 350.
- follow my instructions for making brown butter cookies.
- add butter, monk fruit, pretzels, & pecans to a skillet over low heat.
- cook for ~6-8 minutes or until mixture starts to caramelize.
- transfer mixture to a lined baking sheet & allow to cool completely to harden.
- break up pretzel & pecan mixture, then fold ~1/2 of that + freeze-dried strawberries & white chocolate chips into cookie dough batter.
- place cookie dough in refrigerator for 30 minutes.
- scoop out cookies using a cookie scoop size of choice & evenly spacing out on a baking sheet.
- bake cookies for 9-11 minutes.
- once done cooking, add salt + option to use a round object to get cookies into more of a circle shape.
- allow to cool completely before adding ice-cream.

- make a batch of my cottage cheese ice-cream using strawberry protein powder.
- fold-in remaining pretzel & pecan mixture + strawberry jam.
- freeze for at least 4 hours.
- to assemble sandwich, thaw your cottage cheese ice-cream for ~5 minutes, then add a scoop to a cookie & sandwich other cookie on top.
- freeze for another 4 hours & enjoy!
