If you have been here with me a while now you know I absolutely LOVE soups. This hearty and delicious Unstuffed Pepper Soup makes a huge pot full so you are sure to have leftovers to freeze for another time! The best part is it is ready in and hour and that includes prep time! The whole family will love this soup. David had two big bowls full which is always my sign its a winner!

Process

  1. In a large pot cook beef, pork, onions and garlic till meat is no longer pink
  2. Drain any fat
  3. Add remaining ingredients except cauliflower rice and parsley
  4. Simmer 20 minutes
  5. Add cauliflower rice and simmer 10 minutes more
  6. Garnish with parsley

    I have to commend you once again on another fantastic, budget friendly, versatile, everything on hand recipe. I just finished making it and the smells in my home are literally mouthwatering. I didn’t have any tomato sauce on hand, so I subbed fresh tomatoes. A quick whiz in my food processor and into the pot it went. This came together in literally no time at all. I couldn’t ask for a more comforting meal on this cool evening. I’m very confident this will taste even better tomorrow once the flavors have melded. I will absolutely have this on regular rotation now that the cooler weather is arriving. I fully plan on double or triple batching this to freeze.

  2. Thank you so much for your kind words! I too use my own tomato sauce for this one as it adds such a nice fresh taste. It freezes well too. I have some in the freezer right now! I will have new soups coming as the cooler months approach. Penny❤️

      You’re most welcome! Others need to know how simple, hearty and comforting it is. My neighbor had a bowl of it and she kept racing how delicious and filling it was. She said she could eat it all day every day, and I had to agree. I’m definitely going to make your tomato sauce. It’s in my to-make list since I saw the recipe.
