Tuscan Shrimp
Would you believe this Tuscan Shrimp literally takes less than 30 minutes start to finish? It has the most deliciously creamy sauce that has spinach and sun dried tomatoes in it. Ingredients
- 1 lb1 lb1 lb Raw Shrimp, shelled & deveined
- 2 Tbsp2 Tbsp2 Tbsp Ghee
- 6 cloves6 cloves6 cloves Garlic, minced
- 0.5 cup0.5 cup0.5 cup Onion, diced
- 0.5 cup0.5 cup0.5 cup Sun Dried Tomatoes, julienned
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 13.5 oz13.5 oz13.5 oz Coconut Cream, refrigerated
- 5 oz5 oz5 oz Baby Spinach
- 0.25 cup0.25 cup0.25 cup Nutritional Yeast
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Powder, mixed into 1/2 cup water
- 1 tsp1 tsp1 tsp dried Oregano
- 1 Tbsp1 Tbsp1 Tbsp Flat Leaf Parsley, chopped
- 6 whole6 whole6 whole fresh Basil, leaves, chopped or 1 tsp dried basil
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt ghee in a large sauté pan
- Add garlic, sauté 1 minute
- Add shrimp and cook 2 minutes each side, move to a bowl
- Add oil and onion and sauté till translucent
- Add sun dried tomatoes, stirring 2 minutes
- Reduce heat to medium low
- Add coconut cream and bring to a slow boil, stirring occasionally
- Season with salt and pepper
- Add arrowroot mixture if needed to thicken sauce
- Add spinach and yeast stirring till spinach wilts
- Add shrimp and herbs to pan and stir well
