sweet & smoky mole chicken nachos

now, you can absolutely choose any chips as the base, but mixing masa's churro + spicy cobanero flavored beef tallow tortilla chips together is chef’s kiss. pile your chips with the easy & delicious mole chicken, melty cheese, veggies, & whatever toppings your heart desires. 😌
Ingredients
mole chicken
- Avocado Oil, or fat of choice for sautéing chicken

- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless Skinless, cut into 1/2" pieces

- 1/4-1/2 cup1/4-1/2 cup1/4-1/2 cup Gourmet Mole Poblano Sauce - Mayanshul, + salt & pepper as needed
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour
- 1/2-1 cup1/2-1 cup1/2-1 cup Water, or broth
nachos
- Traditional Tortilla Chips - Masa, I used the churro & cobanero flavor

- sautéed frozen vegetables (click for recipe), I used peppers, onions, & mushrooms
- Oaxaca Cheese, or mexican cheese of choice
- Cotija Cheese, optional garnish
- Pumpkin Seeds, optional garnish

- Cilantro, optional garnish
- Radish, optional garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, add fat of choice & melt.
- add chicken thighs & mole seasoning + starch to skillet; cook for 6-8 minutes.
- add in ~½ cup water; simmer for 5-6 minutes or until chicken is cooked through.
- in a separate skillet, saute veggies of choice until tender.
- to build nachos, layer on: tortilla chips → mole chicken → sautéed veggies → cheese → garnishes of choice.
