This Gyro Chicken Salad is so fresh and flavorful filled with juicy roasted chicken, sweet grape tomatoes, crisp English cucumber, tangy Kalamata olives and the best dressing made with Primal Palate gyro spice! We enjoy it over a bed of baby romaine with extra gyro dressing.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350F
  2. Drizzle olive oil on chicken and 1 Tbsp of Gyro spice
  3. Roast 45 minutes, cool and dice
  4. Meanwhile in a blender combine dressing ingredients and blend till creamy
  5. In a large bowl add chicken, cucumbers, tomatoes, olives and onion
  6. Toss with a rubber spatula
  7. Mix mayonnaise with 1/4 cup of the dressing, salt and pepper
  8. Add to chicken salad and toss well
  9. Enjoy!
