Gyro Chicken Salad
This Gyro Chicken Salad is so fresh and flavorful filled with juicy roasted chicken, sweet grape tomatoes, crisp English cucumber, tangy Kalamata olives and the best dressing made with Primal Palate gyro spice! We enjoy it over a bed of baby romaine with extra gyro dressing.
Ingredients
- 2 lb2 lb2 lb Boneless Skinless Chicken Breasts
- 1 cup1 cup1 cup English Cucumber, diced
- 0.25 cup0.25 cup0.25 cup Red Onion, diced
- 1 cup1 cup1 cup Grape Tomatoes, 1/4rd
- 0.5 cup0.5 cup0.5 cup Kalamata Olives, cut in half
- 0.25 cup0.25 cup0.25 cup Avocado Oil Mayonnaise
- 0.25 cup0.25 cup0.25 cup Gyro Dressing, see recipe below
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Primal Palate Super Gyro Seasoning
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 1 cup1 cup1 cup Plain Yogurt, unsweetened and dairy free
- 0.5 cup0.5 cup0.5 cup English Cucumber, peeled and diced
- 1 tsp1 tsp1 tsp Primal Palate Super Gyro Seasoning
- 2 Tbsp2 Tbsp2 Tbsp fresh Dill, chopped
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice, fresh

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F
- Drizzle olive oil on chicken and 1 Tbsp of Gyro spice
- Roast 45 minutes, cool and dice
- Meanwhile in a blender combine dressing ingredients and blend till creamy
- In a large bowl add chicken, cucumbers, tomatoes, olives and onion
- Toss with a rubber spatula
- Mix mayonnaise with 1/4 cup of the dressing, salt and pepper
- Add to chicken salad and toss well
- Enjoy!
