French Onion Meatloaf
This French Onion Meatloaf is to die for! A little secret....David does not like meatloaf at all but he had 2 helpings of this and said it was the best meatloaf he ever had! I think I may have a winner here! He even asked for leftovers! It does take a little longer because you have to caramelize the onions but you have to trust me here, it is so worth it! I cant wait for you to try it!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 1 lb1 lb1 lb Ground Pork
- 0.5 cup0.5 cup0.5 cup Italian Nut Crumbs, or almond flour
- 2 whole2 whole2 whole Eggs, beaten
- 1 Tbsp1 Tbsp1 Tbsp Coconut Aminos
- 0.5 cup0.5 cup0.5 cup Ketchup, unsweetened, I like Noble Made
- 0.25 cup0.25 cup0.25 cup Flat Leaf Parsley, chopped
- 0.5 cup0.5 cup0.5 cup Onion, caramelized (see recipe below)
- 5 whole5 whole5 whole Vidalia Onion, large, peeled & sliced
- 3 Tbsp3 Tbsp3 Tbsp Ghee
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp dried Thyme
- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar
- 1 cup1 cup1 cup Onion, caramelized (or whatever you have left)
- 1 cup1 cup1 cup Beef Broth
- 0.5 cup0.5 cup0.5 cup Coconut Cream
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 1 tsp1 tsp1 tsp Dijon Mustard
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Powder, mixed with 1 tbsp water, slurry

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Caramelized Onions:
- Melt ghee in large pan
- Add oil
- Add onions, salt, thyme & balsamic
- Cook over med high heat till onions soften, tossing every few minutes so they don’t brown
- Cover and turn to medium heat
- Stirring every 5 minutes till they become caramelized. Takes about an hour
Meat Loaf:
- Preheat oven to 350°F.
- Combine all ingredients in a large bowl mixing well
- Shape into loaf shape and place in roasting pan
- Bake 1 hour
Caramelized Onion Sauce
- Add to remaining onions, broth, coconut cream, coconut aminos, garlic, salt, pepper & Dijon
- Bring to a slow boil then reduce heat and let simmer till it begins to thicken
- Add arrowroot slurry if needed
- Serve over meatloaf slices
